FIESTAS usually start with families, friends & neighbors heading to church to celebrate Mass, followed by a procession around the village in which a statue of the honored saint is pulled on a decorated karosa or wagon. After that comes, usually on Sunday - a party with lots of traditional Chamorro food, music and dancing. The families prepare heavily laden tables of local delicacies, such as red rice, shrimp patties, barbecued ribs, fritada, taro leaves cooked in coconut milk, banana cooked in coconut milk, kelaguens, roast pig and many more. We must not forget the finadene sauce that is made with soy sauce, lemon powder or vinegar, onions & hot peppers which is sprinkle over the food. Food is an important part of the Chamorro culture and seeing a guest enjoying traditional dishes shows respect. After a hearty meal, Chamorros often enjoy chewing pugua (betel nut). All enjoy the company of family & friends throughout the day. At the end of the fiesta the family members & friends balutan (pack) food to take home. It's the traditional way to end a fiesta.

Taro doughnuts
Ingredients
- 5-10 pounds of dago, peeled (taro)
- 4-6 young coconuts, grated
Grate dago into a pan or bowl. Add flour, water, coconut and sugar.
Mix ingredients thoroughly and shape into round balls.
Fry in hot cooking oil for 10 to 15 minutes or until golden brown.
